12 cups mixed greens, washed and in bite size pieces 1 cup sliced strawberries or other whole summer berries, or a mix 1 cup cubed nectarine or 1 10.5 oz. can mandarin orange slices packed in juice 1 cup glazed walnuts or other nut of choice 1/2 cup cubed cooked chicken breast 1/2 cup crumbled blue cheese (optional)
To make salad, place all ingredients except nuts, chicken and cheese in a large salad bowl and toss very gently so that ingredients are distributed. Season with salt and freshly ground pepper. Set aside.
Place dressing ingredients in a bowl and whisk until mixed.
Sprinkle nuts, cheese and/or chicken over salad. Add dressing and mix only until ingredients are coated.
