1 C. white or yellow cornmeal 1 C. sifted flour 1/4 C. sugar 3 tsp. baking powder 1 tsp. salt 1 egg 1 C. milk 1/4 C. melted butter Directions
Preheat oven to 425°F. Combine cornmeal, flour, sugar, baking powder and salt in a bowl. Beat egg with milk and butter. Add to the dry ingredients and stir lightly, just until mixed. Pour into a well-buttered 9-inch square pan. Bake for 20 to 25 minutes.
